What the evening looks like
Dinner, mostly. A drink first while everybody works out the rhythm of it, then a table, then whatever the pace of the room allows afterwards. Your companion carries the conversation when it needs carrying and leaves it alone when it does not, and she talks to both of you rather than to one. Couples who have done this before tend to book longer the second time, which is the usual sign.

Where it suits out here
Country houses do this better than town hotels. Burnham and Taplow have dining rooms in their own grounds where the loudest thing after nine is the gravel, and a table for three there attracts no attention whatsoever. Grovefield House and Burnham Beeches both take a long evening happily.

Timing it properly

Three people take longer to settle than two do, the first half hour is the shyest part of the night, and out here the drive to the table eats an hour that nobody accounted for. An early start helps as well, since a country dining room at half seven is a different room from the same one at ten.

She meets the two of you in the hotel bar, usually at seven, and the first drink is spent finding common ground: where you are staying, what brought you out to Berkshire, how the week has gone. Dinner runs through the middle of the evening, and she keeps the talk moving among all three people rather than settling into a conversation with either one. The last hour is coffee, a walk in the grounds if the night is dry, and a goodnight in the lobby when the booking ends.
If either of you changes your mind
Say so at any point and it is respected without discussion. Before the evening, three hours of warning cancels it at no cost. During it, either of you can end things early with a word to her, and she will leave pleasantly and without questions. The desk would far rather an evening ended well than ran to time.
